Sea Salt Lamington Bites
MAKES 25 MINI BITES
GLUTEN-FREE, DAIRY-FREE, LOW FODMAP, MODERN PALEO, VEGAN VEGETARIAN

INGREDIENTS
- 8 fresh medjool dates (pitted)
- 1 cup shredded coconut
- ½ cup blanched almond meal
- ¼ cup cacao powder
- 2 Tbsp hemp seeds
- ¼ tsp sea salt
METHOD:
- Pit dates and soak them in warm/hot water for 10 minutes
- Drain water from the dates and place in a food processor. Blitz until smooth then add all remaining ingredients
- Blitz until evenly combined and smooth (a little chunky is fine) if using your pulse setting, pulse 7-10 times
- Line a square tin with baking paper then transfer the mixture on top
- Use the back of a rubber spatula to spread the mixture out evenly and flatten out the surface
- Set in the fridge for 3-4 hours before slicing into 25 mini bite-sized portions! Store in the refrigerator in an airtight container
