Sea Salt Lamington Bites

MAKES 25 MINI BITES

GLUTEN-FREE, DAIRY-FREE, LOW FODMAP, MODERN PALEO, VEGAN VEGETARIAN

Low FODMAP Note: enjoy one piece per serve

 

INGREDIENTS

  • 8 fresh medjool dates (pitted) 
  • 1 cup shredded coconut
  • ½ cup blanched almond meal
  • ¼ cup cacao powder
  • 2 Tbsp hemp seeds
  • ¼ tsp sea salt

 

METHOD:

  1. Pit dates and soak them in warm/hot water for 10 minutes 
  2. Drain water from the dates and place in a food processor. Blitz until smooth then add all remaining ingredients
  3. Blitz until evenly combined and smooth (a little chunky is fine) if using your pulse setting, pulse 7-10 times
  4. Line a square tin with baking paper then transfer the mixture on top
  5. Use the back of a rubber spatula to spread the mixture out evenly and flatten out the surface
  6. Set in the fridge for 3-4 hours before slicing into 25 mini bite-sized portions! Store in the refrigerator in an airtight container
