Foxy Pancakes

SERVES 1

GLUTEN-FREE, DAIRY-FREE, NUT-FREE, VEGETARIAN

INGREDIENTS

  • 1 banana (mashed)
  • 1 large egg
  • 1 Tbsp buckwheat flour 
  • 1 tsp chia seeds
  • ¼ tsp cinnamon 
  • 1 tsp coconut oil (for fry pan)

METHOD:

  1. Add mashed banana, egg, buckwheat flour, cinnamon and chia seeds to a small bowl and whisk together with a fork 
  2. Heat coconut oil in a fry pan over a low heat and pour mixture to create two separate pancakes 
  3. Cook for 2½ minutes or until bubbles appear on the surface of each pancake then flip and cook second side for 1 minute 
  4. Serve with maple syrup, slices of banana and a sprinkle of cinnamon
