Cinnamon & Apple Baked Donuts
Serves 18 donuts

Ingredients:
Wet Mixture
- 2 eggs (room temp)
- ¼ cup + 2 Tbsp brown sugar
- ¼ cup maple syrup
- 1 cup pure apple sauce/puree
- ¼ cup melted coconut oil
- 1 tsp apple cider vinegar
Dry Mixture
- 1½ cups gluten free flour
- ⅛ tsp salt
- ½ tsp ground cinnamon
- ½ tsp bicarb soda
- ½ tsp baking powder
Glaze
- ½ cup icing sugar
- sprinkle of cinnamon (to taste)
- dash of dairy free milk (as needed)
Method:
Preheat oven to 175°C fan-forced
- Add all wet ingredients to a large bowl and mix together using an electric mixture until smooth
- Sift in all dry ingredients then on low, beat together with the electric mixer until well combined
- Grease donut moulds with coconut oil
- Add donut mixture to a piping bag or large zip lock bag and snip off the corner (to create your own make-shift piping bag) and pipe even portions of the mixture into 18 moulds
- Bake in the oven for 14-16 minutes. Remove from the oven and allow to completely cool
- Meanwhile, prepare your glaze by whisking icing sugar and cinnamon together in a shallow bowl (sift together if you prefer) then adding small dashes of milk until you're left with a thick yet runny sugar glaze
- Once donuts have cooled, gently dunk each into the shallow bowl of glaze and serve!
- If storing these away for later, I like to consume within 3 days and heat up in the microwave before enjoying
